Bircher Muesli

This recipe is my take on Dr Bircher's version created in the 1900"s. He used raw food to treat his patients and designed a cereal to energize the body. It is really tasty and easy to make. A guaranteed good start to your day.

Ingredients

  • 200g rolled oats (about 2 cups).
  • 350ml apple juice.
  • 1 red apple, grated.
  • 125g natural or Greek yoghurt.
  • Seasonal berries or fresh fruit.
  • A handful of toasted almonds or hazelnuts to serve.
  • Honey, to drizzle.

Method

  • Place the oats in a bowl, and add the apple juice. Cover and chill in the fridge overnight. The mixture will thicken.
  • Remove the next day and stir the grated apple into the oat mixture with fruit of your choice.
  • Serve the muesli topped with a little Greek yogurt, and toasted almonds or hazelnuts.
  • For a slightly sweeter finish drizzle with a little honey.

Storage

  • The oat mixture can be kept in the fridge for up to a couple of days.
